A Favorite Recipe in our House - Banana Cake

We love to bake in our house, especially this time of year. I love the way it warms the whole house on a chilly Fall day, to say nothing of the wonderful aromas.  A favorite old standby recipe of ours is from my great-grandmother's 1937 Fanny Farmer cookbook. It's well worn and adorned with many penciled in notes from her in the margins, always marking her favorites! This particular recipe was among my now 6 year old daughters' first solid foods and was received with much love as she shoved it in as fast as she could! We love to add chocolate chips but if you love nuts that would also be delicious. We hope you love it as much as we do, enjoy!


Banana Cake

Pre-heat oven to 350F

1/2 Cup butter

1 1/2 cups sugar

2 eggs, beaten

1 cup mashed banana

1 tsp vanilla

2 cups flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup milk

1/2 cup or more chocolate chips (optional, but highly recommended)

Cream butter, add sugar gradually. Add eggs, and beat thoroughly. Add banana pulp and vanilla. sift dry ingredients together and add alternatively with milk. Stir in chocolate chips if using. Bake 20-30 minutes. We put this in a big sizes glass baking pan and bake for closer to 30-35 minutes so be sure to keep an eye on it. It's done when it's brown around the edges. Eat warm. Lasts as long as it takes to be devoured, or maybe even up to 5 days.
